I followed the directions via Saveur's website (with a tiny variation)
MAKES ENOUGH COCKTAILS FOR A PARTY
24 PEOPLE CAN HAVE 2-3 DRINKS
ingredients
FOR THE GINGER SIMPLE SYRUP:
One hunk of Ginger, the size of your fist
3 cups sugar

2 oz. vodka OR gin (I prefer Hendrick's Gin)
3/4 oz. fresh lemon juice
3/4 oz. fresh lemon juice
1 oz. Pear Nectar
(Saveur tells you to use an actual pear and muddle it in the bottom of the glass, I don't like trying to suck chunks of fruit through a straw while I'm drankin', so I opted for Pear Nectar)

1.
Make the ginger syrup (I did this the night before): Combine sliced ginger (roughly chop of the ginger, don't worry about peeling, you will strain it later), sugar, and water in
a small saucepan and bring to a boil over medium-high heat. Remove from
heat and allow to cool to room temperature. Strain out ginger solids
and discard, reserving syrup in an airtight container. (This will make approx. 30+ oz of simple, you can modify the quantity based on your needs)
2. Fill glass with ice

4. Stir to combine
5. Top with ginger ale (about an ounce)
6. Guzzle that shit down
